It is a mixture of rice vinegar and ume fruit (25%) and has a wonderful sweet apricot flavour that adds a warm, fruity element to sweet or savoury dishes. Use it in jellies, fruit based desserts, cakes or puddings. Its tartness also cuts beautifully through rich foods and lifts marinades, sauces and dressings.
